Easy and Flavorful Pickled Beets

For a simple yet delicious pickled beet recipe, you will need eight large beets, one cup of vinegar, half a cup of sugar, one and a half teaspoons of whole cloves, one and a half teaspoons of whole allspice, and half a teaspoon of salt.

Wash the beets thoroughly and trim the tops to about an inch. Place them in a Dutch oven, cover them with water, and bring to a boil. Lower the heat and let them simmer for 25 to 30 minutes until tender. Remove them from the water and let them cool before peeling and slicing. Transfer the sliced beets into a bowl.

In a separate saucepan, mix vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil over medium heat for about five minutes. Pour the hot liquid over the beets and refrigerate for at least an hour. Before serving, drain the liquid and enjoy these flavorful pickled beets with your favorite meals.
